I decided to jump in and try to make a quinoa salad for lunch this week. I found a recipe in the new Kraft Foods: What's Cooking magazine. I like the recipes in these magazine because they have few ingredients, are easy to make and are usually pretty tasty... not to mention that most of my Christmas cookies come from past issues.
This salad is called Mediterranean Quinoa Salad. It has a mix of quinao cooked in chicken broth, cherry tomatoes, cucumber, salad dressing (which I will omit because I am not a fan of dressings), romain lettuce (I have spring mix in the fridge) and feta cheese.
Basically you need to cook the quinoa and let it cool then add it to everything else. This mixture is placed on a bed of lettuce. Sounds like an easy, healthy and delicious lunch for the week.

Yum! I love quinoa!! And the addition of feta totally draws me in. I will definitely be consuming mass amounts of feta & goat cheese once the little peanut is born ;)
I like how easy quinoa is to make and it can be integrated in so many dishes.
